cooling fan control.

How would I use the aux port to control a radiator fan? I simply have no idea how to do this. Obviously, it needs some hysteresis, so that it comes on at like 200 and off at 180 (or other appropriate range).

Is that doable? If so, how?

There is no programmable hysteresis within the megajolt unit itself I'm afraid. You would be better off utilizing a standard fan control switch as can be found on most modern car radiators. These do have their own built in hysteresis and would be perfectly capable to do the job.
